Mom's Banana Cake

I grew up eating this and it was one of my favorites. To me, the almond extract makes the icing.

Ingredients

¾ cup vegetable shortning
½ cup sugar
2 eggs
½ cup sour milk*
3 very ripe bananas
1 tsp vanilla extract
2 cups flour
1 tsp baking powder

3 Tbsp softened butter
2¼ cups powdered sugar
1½ tsp almond extract

*To sour milk, stir ½ Tbsp vinegar into ½ cup milk, then add 1 tsp baking soda

Mise en place

Sour the milk if necessary.

Peel bananas.

Preheat oven to 350 degrees.

Cooking

Cream together shortening and sugar.

Beat in eggs one at a time until fully incorporated.

Mix in remaining wet ingredients.

Sift in dry ingredients until well mixed, but do not over-beat.

Pour into 9x13 inch baking dish and bake about 25 - 30 minutes then let cool.

Mix icing ingredients together, adding just a splash of milk to reach desired consistency. Ice cake and enjoy.
